In collaboration with Crucible we made a drink from the garden itself — bittersweet, seasonal, local.

A spritz made from the fruit of Markfield — a small collaboration that lets the garden speak in a glass.

I. Foraging — hawthorn from the hedge

II. The botanicals shelf at Crucible

It starts in the garden. Hawthorn, rosehip, herbs and whatever the season is offering that week — picked by hand from the hedges and beds at Markfield.

At Crucible's distillery, the foraged fruit meets a shelf of botanicals — gentian root, burdock, cardamom, tonka. Bitter, aromatic, grounding. The garden gets a supporting cast.

III. Prepping the pick

IV. In the still room

Everything is prepped by hand — leaves broken down, fruit weighed, ratios walked back and forth until the balance is right.

Then it goes into the still. What comes out the other side is bittersweet, low-ABV, and unmistakably of this place — a drink you can only really make if you know the garden it came from.
